Simple ways to keep vitamins in food.
- Leave edible skins on vegetables and fruits or trim away as little as possible.
- Cook vegetables or fruits in as small amount of water as possible and in covered pots.
- Cut vegetables that need to be cooked longer, but in larger pieces.
- Eat vegetables and fruits raw. If use of insecticides, pesticides or ripening chemicals is suspected, then washing and cooking is necessary.
- Save liquid from cooking vegetables and add it to soups and sauces.
- Cook vegetables and pulses without adding baking soda.
- Only bare minimum water necessary to cover vegetables should be used. Spinach and other tender greens need to water.
- Vegetables should not be exposed to atmospheric air. They should be covered tightly while cooking.
- Keep milk in opaque containers. Sunlight destroys vitamins.
