Simple ways to keep vitamins in food.

  1. Leave edible skins on vegetables and fruits or trim away as little as possible.
  2. Cook vegetables or fruits in as small amount of water as possible and in covered pots.
  3. Cut vegetables that need to be cooked longer, but in larger pieces.
  4. Eat vegetables and fruits raw. If use of insecticides, pesticides or ripening chemicals is suspected,  then washing and cooking is necessary.
  5. Save liquid from cooking vegetables and add it to soups and sauces.
  6. Cook vegetables and pulses without adding baking soda.
  7. Only bare minimum water necessary to cover vegetables should be used. Spinach and other tender greens need to water.
  8. Vegetables should not be exposed to atmospheric air. They should be covered tightly while cooking.
  9. Keep milk in opaque containers. Sunlight destroys vitamins.
